Just Stop & Get the Mole Enchiladas #100DaysofSummer

Today I was on my daily walk in Eagle Rock. I took the Eagle Blvd to Colorado blvd trek. The trek that passes by a Oxacan Eatery called Lola Cafe.
I’ve walked by so many times. I’ve seen people drinking fancy cafe de olla coffees and dulce de leche lattes. I’ve seen people eating chilaquiles with rib eye, waffles piled with berries and of course tacos. I’ve never stopped at this place. I’ve always kept on walking.
Today, as I passed by Lola Cafe, I saw a guy eating enchiladas Rojas . So, I stopped. Checked out the menu and left.
Then I came back. I ordered the enchiladas con mole with chicken and Oaxaca cheese and of course a “not too sweet” dulce de le he iced late.
The enchiladas were soft and tangy with a luscious blend of spice and chocolate. The chicken perfectly tender intertwined with the Oaxaca cheese.
This whole episode took me back to Mexico City 2023 when I would just escape my cousins and wander the streets finding random cafes to sit and have coffee as well as do a bit of writing.
Lola Cafe in Eagle Rock has Oxaca fries topped with melted Oxaca cheese as well as “chapulines” aka spicey crickets. I’ll definitely save those for another day and another walk.
